Finding It Easy to be Green
Tender Greens distinguishes itself from the rest
Tender Greens could have easily been lumped together with every other order-at-the-counter venue, yet its commitment to using local food products and the special “extras” — ceramic plates, spacious ceilings, an outdoor patio and Dave Matthews playing in the background — distinguish it from the typical establishment.
That is, if you can find it. The restaurant is inconspicuously located in Liberty Station, the former Naval Training station and hip-and-happening urban center. It’s the eatery’s second location; the first opened two years ago in Culver City. Also, Tender Greens doesn't believe in advertising and instead prefers cultivating word-of-mouth and repeat customers. So far, the strategy appears to be successful.
I went around noon on a Monday, a week after the grand opening, and business was constant. Scattered groups of diners lingered to chat and enjoy their time together. It may also have been the hearty portions that kept them sedentary: Tender Greens specializes in $10 salads big enough to share or take home half.
I ordered the Chinese chicken “Big Salad.” As the chef combined the ingredients (greens, peas, carrots, crispy wontons, cilantro, green onion, peanuts and sesame dressing) he explained that the lettuce was in the ground yesterday and is specially planted for Tender Greens’ use. True to his word, the salad tasted fresh and I was especially impressed with the chicken, which had flavor and was expertly grilled.
Hearing the story behind Tender Greens from executive chef Pete Balistreri makes the restaurant even more appealing. Balistreri grew up in San Diego with best friend and co-chef Ryan Brandenburg; they used to play baseball together, but eventually went to culinary school in San Francisco. Today, they work together and their joking banter keeps a light mood among staff. Continuing the friendly, family atmosphere, Bradenburg’s mother, Susanna, is the pastry chef, and her homemade peach cream tart I sampled was delicious.
Tender Greens may not advertise, but the quality salads and relaxed vibe will soon make it a local hot spot at Liberty Station.
